This cut is best kept on the rare side. Overcooking this cut will make it tougher due to it being leaner. All you need is a generous amount of salt and pepper and sear each side on high heat. Top with a little butter and you’ll be one happy rancher!

Our steaks are packed with lots of flavor from a diet of a variety of grasses and forbs, but less fat than your commercial counterparts. While our steaks are leaner, they are tender with rich flavor.
